Half portion of a medium chicken cut into pieces;

3 Kaffir lime leaves or 1 tbsp lime juice;

a cup of fresh basil leaves;

3 medium red bell peppers (cut in cubes);

3 tomatoes (cut in cubes) ;

2-3 eggplants finely chopped;

1 cinnamon stick or ½ tsp cinnamon powder

Red Curry Sauce:

Coconut milk- ½ can (side the remaining ½ can);

small piece of ginger;

3-4 garlic gloves; a onion quartered;

2-3 tbsp of fish sauce;

chilli powder;

1 tbsp crushed cumin;

1 tbsp chopped coriander;

2 tsp brown sugar;

2-3 tsp shrimp paste;

1tsp regular chilli flakes

Method Of Preparation:

Take a bowl and place the chicken pieces in it.

Blend the red curry sauce ingredients together.

Then pour the curry sauce mixture into the chicken pieces and mix them well together.

Add the kaffir leaves and cinnamon powder into the prepared chicken mixture. Cover it properly and bake for about 45 minutes in the oven at 350 degrees. After 45 minutes, taste it and if the dish is not salty enough add another 1 tbsp of fish sauce; and if you want more sauce, add the remaining coconut milk kept aside earlier.

At this point, add the vegetables.

Bake the dish again for another 15 minutes till the vegetables and chicken are properly cooked.

Take out the dish into a large serving bowl.

Decorate with fresh basil leaves.

Serve hot!

Have with rice.
