Rice and black bean pilaf is a delicious meals that can be cooked easily and quickly. It is an excellent source of fiber, protein. It is rich in vitamins like vitamin A, K, C and B6. It also contains niacin, phosphorous, manganese, thiamin, iron, copper, magnesium, selenium and potassium. Fat and cholesterol is less in this food. Here are some tips to prepare this delicious rice.

Tips to make Rice and Black Bean Pilaf

1. Take one cup of uncooked brown rice and two and quarter low sodium chicken broth in a sauce pot. Keep this pot on a high flame and let it to boil. Once it got boiled reduce the heat to low flame and cover it to cook the rice till it becomes soft and tender. By the time the entire liquid in the pot will be absorbed by the rice and it takes almost 30 minutes.

2. Remove the pot from the flame and keep it uncovered. Fluff the rice with a fork.

3. Keep a large sauce pan on the stove on medium heat and add one table spoon of olive oil in to it. Add one small sliced onion and cook it till it becomes translucent and tender. It takes around five minutes.

4. Add two cloves of minced garlic, one stalk celery, two teaspoon of chopped fresh oregano or one teaspoon of dries oregano. To this mixture add one large finely sliced carrot, half teaspoon of dried chili flakes and one teaspoon of ground cumin and cook them well with occasional stirring. When the carrot becomes soft and not mushy add the other ingredients. It takes around six minutes for the carrot to cook.

5. Take one can of low sodium black beans and wash, drained and rinse them well. Add these black beans to the sauce pan and cook it till it becomes warmer thoroughly that is about two minutes.

6. Now add the cooked rice to this black bean onion mixture and toss them well to mix up. Take in serving bowls and decorate it with two teaspoon of finely chopped parsley leaves.

Now your rice black bean pilaf is ready to have.
