Its name is derived from ‘paellera’, the round flat pan with handles on two sides on which this rice dish is traditionally cooked. During festivals, paella is cooked in giant paelleras, to feed hundreds of people who gather around the cooking spot.

Here is a simple traditional paella recipe that you can cook at home.


2 bowls of Bomba rice or Spanish Calasparra rice. You can also use any medium grain rice

5 bowls of fish stock

Shrimps, squids, mussels as much as you want to put in your dish

1 green pepper

1 red pepper

2 tomatoes

1 onion

1 can of peas

4 clove of garlic

2 teaspoons of chopped parsley

4 tablespoons of extra virgin olive oil

2 teaspoons of Spanish smoked paprika

Salt to taste

Method of preparation

Finely chop the onion, green and red pepper and four cloves of onion. Peel and de-vein the shrimps. Cut the squids in rings and scrub the mussels. Now peel the tomatoes, remove its seeds and dice it.

Heat oil in a pan and sauté diced onions. Add the chopped parsleys, a portion of the chopped garlic cloves and stir the ingredients. Add the diced tomatoes to the onion. Add paprika. Cook until the tomatoes become soft. Mash the tomatoes. Cook until the paste attains a thick consistency. Put the tomato paste in a pan and add the rice to it. Stir the rice for a minute. Now add the fish stock, salt and saffron threads to the rice. Cook the rice for about 15 minutes.

While the rice is being cooked, prepare the other ingredients. In a separate pan, cook the mussels in simmering water. Cover the container and cook for sometime over low heat. After about 5 minutes, strain the water. Discard mussels whose shells have not opened. In another pan put some extra virgin olive oil. Add the remaining garlic. Add the shrimps and cook for a few minutes. Now add the squid rings and stir it for a minute. Add salt and set the pan aside. In a pan heat oil, and cook the diced peppers for about 5 minutes.

Now see whether the rice has become soft. Now add the seafood, the peppers and the green peas and stir the ingredients for a minute. Your paella is now ready.
