Ingredients

1 cup of De husked wheat

1/3 cup of Chickpeas

1/3 cup of Dry white beans

2 tablespoons of Rice

12 1/2 cups of Water

10 Dried apricots

5 Dried figs

1/3 cup of Raisins (seedless)

1 small sized Orange

1 2/3 cups of Sugar

2 tbsp of Rose water

2/3 cup of whole Walnuts

1/2 of a small size Pomegranate

Method :

First of all Wash the wheat, chickpeas and dried beans well. Now soak them separately overnight with the beans and chickpeas in 1 cup and the wheat and rice mixture in 2 cups of water.

Place the wheat and rice mixture on heat after adding 3 cups of water to it.

Now add 2 cups of water each to chickpeas and beans and place them separately in pressure cookers to be cooked on heat. Cook the wheat till all of the grains are dissolved and the starch starts to come out. While preparing the wheat and the beans and chickpeas on the other hand wash the dry fruits and soak them for 2 hours in 1 1/2 cups of water. Remove the cooked ingredients from heat and mix them with the dry fruit in a pan and cook this again for about 15 minutes.

Peel the orange and cut the rind into 3-4 cm long and 1 cm wide strips. Then divide the orange slices into 4-5 pieces. Add all of them together to the mixture and cook for another 5 minutes.

Finally add the sugar and cook for 1 or 2 minutes and turn off the heat. Add the rosewater and stir. Serve in dessert cups, garnishing with the walnuts and pomegranate pits.

SEMOLINA HALVA

Servings: 6 Persons

Prep Time: 20 minutes

Cooking Time: 35 minutes

Ingredients:

1 1/2 cups of Margarine

2 tbsp of Pine nuts

2 cups of Semolina

2 2/3 cups of Water

1 1/3 cups of Sugar

Method :

Melt the margarine in a pot and add the nuts and the semolina to it and fry them till they turn brown, stirring all the time. Simultaneously boil the water in a separate saucepan. To this add the sugar and let it melt. When it is done add it to the semolina,stirring all the while and then let it simmer for 10 minutes. Cover with a plate and let stand for 20 minutes. Before serving toss it well.
