The seeds of many plants are used as spices. They are used as such to enhance the flavor of our food. Sometimes they are grind and mixed with other spices to make spice blends. The spices add not only flavor but also taste .The most commonly used seed spices are:

1. Ajowan

It is similar to cumin in appearance but it tastes differently. It is used in pharmaceuticals and food industry. It is used for making pastries, breads and savory snacks. Also used as a preservative or antioxidant. The oil extracted from the seeds is used as an anti spasmodic. The oil has fungicidal and germicidal property too. It is also used in perfumery or in essence.

2. Aniseed

Aniseed is widely used for its medicinal and culinary property. It is used in breads, cookies, cakes, pickles, stews and also in non vegetarian preparations. The oil produces from the seed is found to reduce colic pains and improve the lactation in breast feeding mothers.

3. Celery Seed

Seeds of celery are found to mix with salt to make celery salts which are used to make cocktails. Celery is rich in vitamin C and so is effective against flu and cold. It also strengthens the immunity level. Celery is found to cut short the cholesterol level in our body and improves the cardiovascular health.

4. Coriander Seeds

Coriander seeds are used for curry powders, seasonings, alcoholic beverages, pastries, cakes etc. coriander seeds are having an anti bacterial property and are also used to get rid of mercury, lead and aluminum from the body.

5. Cumin

Cumin seeds are used for flavoring biscuits, confectioneries, dishes etc. They are also used to flavor rice. It is also used as a stimulant and carminative. It has anti microbial property too.

6. Fennel seeds

Fennel seeds are used for flavoring food. It is also used as a mouth freshener. The oil extracted from fennel seeds are used for stomach upsets and for relaxation. The oil is found to make soaps and perfumes.

7. Fenugreek Seed

Fenugreek seed are used for flavoring dishes, pickles, sauces etc. It improves the milk production in breast feeding mothers. It is found to reduce blood sugar level and also the blood pressure. It reduces congestion, inflammation, sinus and bronchitis.

8. Mustard Seed

It is used for its aroma and flavor. The oil obtained from it is used for cooking. It is useful in tooth aches, respiratory problems and in rheumatism.

9. Pepper Seeds

Pepper seeds are used for its pungent taste and aroma. It is used in most of the Chinese preparations. It is also used as a preservative and in spice blend.
