It is an excellent meal for people who don’t get much time to cook. It contains nutrious vegetables also. You can add some more vegetables to this recipe; chard, eggplant, potatoes can be easily added to increase nutrition value of the meal.


Dried chick-peas (3 cups)
Onions (4 medium in size)
Whole tomatoes (4 medium in size)
Plain yoghurt (1 cup)
Fresh spinach (2 cups, chopped)
Tomato Paste (1 can)
Cumin seeds (1 teaspoon)
Lemon peel (1/3 cup, chopped)
Coriander (1/2 teaspoon)
Olive oil (1/4 cup)
Paprika (1 teaspoon)
Freshly ground black pepper (1 teaspoon)
Ginger (grated, 2 teaspoons)
Garlic (2-3 cloves)
Salt as per taste

Active Time: 10 minutes

Cooking Time: 20 minutes


You should soak the chickpea before cooking them. It is best to cover the bowl of water and let them soak overnight. There is another method for soaking the beans. This is not as time consuming and will take only about two hours. Just rinse the chickpeas in cold water. Drain them thoroughly; use a colander for best results. The chickpeas must be boiled in water. Just add them into a pot and cover them with water. The water should be sufficiently above the chickpeas, about 2 inches above. Now boil the water. Once the water begins to bubble, cover and let the chickpeas simmer for around 2-3 minutes. Remove from the gas and let them soak in the hot water for around an hour.

Peel and slice the onions into finely. Grate the ginger. Peel and remove about 3 pods of garlic. Crush them lightly with a wooden spoon. Use a large skillet to make this stew. Heat the skillet on a medium flame. Add oil and allow it become hot. Next, add the garlic cloves into the skillet. Let them turn brown. Next, add the slices ginger, minced onions, and chillies into the skillet.

Sauté these ingredients for about 5 minutes. The onions should become soft and translucent. Then add the chickpeas, water, cumin seeds, and pepper. Let them simmer for about 5-7 minutes. Wait for the water to evaporate and then add the tomatoes. Cook till they soften and blend into the rest of the ingredients. This will take about 2-3 minutes. If you find using so many spices confusing, just purchase a packet of curry powder. Add curry powder as per instructions provided on the packet.

Turn off the gas and remove from heat. Chop a bunch of spinach roughly. Also, chop fresh coriander leaves. Add them to the hot chickpea curry slowly. Add only a handful at a time and keep stirring it thoroughly. Add the 1 cup of plain yogurt and give it slight stir. This gives a creamy flavor to the spicy stew! Serve hot with boiled rice, pitta bread, and couscous. Crisp pitta bread goes really well with this stew. You can butter pitta bread lightly and bake it in the over. Baking for around 10 minutes should be enough to turn it into delicious golden brown crisp bread.
